In the past, when people used to make bread at home, fried panzerotti were the perfect accompaniment for cheese and boiled beans.

Ingredients:
2 caps unbleached all purpose-flour plus extra flower for kneading, 1/2 tablespoon wet yeast, 1/2 teaspoon salt, Extra-virgin olive oil. Olive oil for frying, Extra salt for dusting.

Preparation:
1. Dissolve the wet yeast in a cup of warm water.
2. Make a well with the flour and place the salt, oil and a half cup of the water/yeast mixture in the center. Using a fork, start mixing the ingredients, adding more water/yeast until all used up. With floured hands, knead the dough energetically until smooth and elastic.
3. Form a ball with the dough and place it in a large flowered bowl, cover with a kitchen towel and let rise in a warm place for 2 hours.
4.When the dough has risen to double its size, place it on a large floured board and using a rolling pin roll it into a 1/2 inch thick sheet. Cut the sheet into 3 inch squares.
5. In a large skillet, heat 2 inches of olive oil.
6.Deep fry the squares until lightly golden on both sides.
7.Drain on paper towels for a few seconds. Sprinkle with salt. Serve hot.
