Ingredients:
12 ounces oil-cured olives, pitted and finely diced, 1/2 cup extra-virgin olive oil, 1 clove garlic, 8 thin slices peasant style bread, toasted.

Preparation:
1. In a small terracotta bowl mix the olives with the oil until the mixture is well blended. Cover and set aside.
2. Toast the bread on both sides and rub each slice with the garlic.
3. Spread the bread with the olive mixture. Serve at room temperature.
