Panzanella, or Bread Salad

Ingredients:
8 slices peasant style bread, soaked in water and squeezed “dry”, 4 ripe plum tomatoes, diced, 1 large red onion, diced, 1 cup red wine vinegar extra-virgin olive oil, salt and freshly ground black pepper to taste.
Preparation:
Place all the ingredients in a large bowl and mix until well blended. Refrigerate for one hour. Serve cool.
